Diabetes Breakfast: Waffles Topped with Creamy Peanut Butter

A hearty breakfast is the way to start the day. Have some waffles for a change—don’t worry, you won’t need any syrup! Pair it with a yummy vegetable smoothie to start getting your portions in early.

Ingredients for the Waffles:
4 multigrain waffles
½ cup natural peanut butter (no sugar added)
1 cup sugar-free whipped topping
1 diced banana
For the Smoothies:
1 cup ice
½ cup frozen strawberries
1 cup peach mango herbal tea
1 cup carrot puree (baby food is fine)
1 or 2 packets of stevia sweetener
2 – 3 cups raw fresh spinach

Toast the waffles. As they toast, get a bowl out and mix the peanut butter and whipped topping with a whisk until smooth, light and fluffy.
Place the waffles on a plate and top with a big dollop of peanut butter fluff. Sprinkle on some of the diced bananas over it.
Throw the ice, strawberries, tea, carrot and stevia in the blender. Puree until the ice chunks are gone. Begin feeding in spinach, one handful at a time, adding as much as it will take to thicken the mixture. Pour the smoothie out and serve it alongside the waffle.
